Chocolates are the main ingredient in truffles where the centre of the truffle is
ganache and it is rolled with outer layer covered with chocolate and
chopped/toasted nuts. There is a limited to no cream in the Truffles so a
longer shelf life is possible. Whereas Nama is made with fresh cream & chocolate.”
  1. Difference between the 3 Month, 2 Months and 1 Month Defrost Shelf life.
Why is it so? On What Criteria is it differentiated amongst themselves.
Customers are aware of the Total Shelf Life, but what about the Defrost
Shelf Life. Kindly explain with some facts.
We need to understand what is expiry and what is shelf life.
Expiry date of the chocolate :-
The expiry date is the date that the manufacturer lists on the labelling that states
how long a product will ‘stay good’ for as long as it remains unopened.
Shelf life :- The broad definition of shelf life is the length of time that
products may be stored without becoming unfit for use or consumption.
For an example a bread has expiry date of 3 months in a freezer but as soon as defrost it and break the seal, you can only consume it in 7 days before it
rots. Similarly, Royce’ chocolates are made with different ingredients and have a shorter shelf life. To transport the same from Japan to India and other
countries, as soon as the chocolates are made they are frozen so that they
do not become unfit for consumption while being sent across to different
locations. Once the chocolates are defrosted (carefully) they go back to their original state where they have to consumed within a shorter period. The determination of defrost shelf life depends on many factors such as natural tendency of the ingredients used, Microbiological changes etc.
One chocolate will have more of cream whereas the other would have more of cocoa mass. The way these ingredients react is different hence different
shelf life.
